Lets please delve into burrata cheese a little.

This past weekend on our time away at a fantastic sea side resort in the only tiny shop available they had some of the best bread I've tasted! Then I spotted the burrata cheese got so excited 🙂 Hence this burrata, blackberry and grilled bread recipe.
Burrata is easily available yes but there is so much in our everyday stores that sometimes gems like burrata get lost and you end up using it for those once in a while treats. Finding it in that particular shop where the cheese choices were slim was like a finding a gem.
WHAT IS BURRATA?
The name burrata comes from the Italian word for buttery. I have seen many recipes where burrata is explained very differently and perhaps it is new recipes but the original burrata is quite simply a buttery cheese.
The texture of the core incorporates rich butter into the cheese filling, is soft and almost oily in texture. That's the burrata we know and love and that my husband grew up eating so I'm going to go with that since it's from his birth province. Also just as a matter of interest, burrata cheese was actually born to minimize food waste where they could use up any leftovers in the making of the cheese process.
BURRATA SALAD
This is a super simple salad and requires a very light and delicious dressing that will allow the burrata to shine without overpowering it. Some salad dressings really put flavor into the word flavor and are needed to blend and compliment the salad ingredients. When I made this Summer Plum Salad With Carpaccio and Pecans with this powerhouse of a PEPPERDEW SALAD DRESSING is a perfect example of what worked brilliantly!
SALAD DRESSING
This simple salad dressing which consists of extra virgin olive oil, a blend of coarse salt and freshly ground black pepper from our Smell and Taste Spice Blend Range, and a generous squeeze of fresh lime was all that this salad needed. For something a little more herby and a whole lot of flavor but not intimidating try our well received and much complimented Garlic & Herb Spice!
Along with the the blackberries and burrata cheese you can serve a fresh crisp lettuce which will be the base of the salad. Because the salad is simple and doesn't call for loads of ingredients make sure that all the ingredients are the best you can find in terms of freshness.
It doesn't matter what greens you use as a base as long as you they are fresh and crisp. You can also mix things up a bit by using fresh herbs, tossing in some fresh mint or rocket!
I opted for the plain green lettuce here as opposed to this colorful combo that I tend to go with.

Super Simple Blackberry Salad With Burrata Cheese
Ingredients
- lettuce leaves or any leafy greens
- cucumber slices
- fresh blackberries
- burrata cheese
- crusty grilled bread
- Salt & Pepper Blend from Smell & Taste
Instructions
- Rinse and drain the lettuce leaves, cucumber and blackberries. Slice the cucumber. Assemble all the lettuce, cucumber slices and fresh blackberries in a salad bowl/platter starting with the lettuce as your base.
- Tear pieces of burrata cheese and place randomly over the salad.
- Drizzle the olive oil over the salad trying to add a bit more over the cheese.
- Sprinkle with our Simple Salt & Pepper blend.
- Roughly tear pieces of grilled crusty bread randomly and serve. Enjoy! Miranda xx
