Creamy Tahini Chickpea Wraps

These Creamy Tahini and Roasted Chickpea Wraps are quick, easy, healthy and super flavorful.

The combination of creamy tahini, roasted chickpeas, and fresh veggies makes for such a satisfying wrap. Plus, you can use different types of wraps which is great for accommodating dietary preferences or just changing things up. Most times I buy the cauliflower wraps from Woolworths or the beetroot wraps just for a change of delicious.

The wraps are filled with homemade chickpea hummus but you can also use a good store-bought version. Roasting the chickpeas in the air fryer is easier than you think.

On weekends, wraps with a variety of fillings are a great way to break away from the usual weeknight meals. That said, these wraps also make the perfect weeknight dinner if you have the ingredients prepped and ready to go!

Ingredients

  • Chickpeas – Roasted in the oven or the air fryer for a crunchy flavorful finish.
  • Tahini – Adds a rich, nutty flavor with healthy fats.
  • Wraps or Tortillas – There are so many options now from gluten-free options like cauliflower tortilla, almond flour and corn tortillas. Making loads of filling? Choose larger wraps!
  • Spices – Cumin and smoked paprika – a whole lot of flavor!
  • Spring Onion – Any onion can be used. Milder tasting onions are optional but suggested since we are not cooking them.
  • Herbs – Fresh parsley and fresh basil leaves.
  • Fresh Chilies – Choose the ones with the heat level of your choice.
  • Red Bell Pepper – The taste is sweet than the green, but use any bell pepper that you prefer.
  • Salt and Pepper – Kosher or sea salt works best for flavor.

To Serve:

  • Toasted Breadcrumbs – (optional) but super delicious when added in the layers.
  • Hot Sauce – Any, for a spicy kick.
  • Caciotta Cheese – A mild Italian cheese (optional, can be substituted with feta or cottage cheese).
  • Sour Cream – Optional for serving.

How to Make Creamy Tahini Chickpea Wraps

Once you have your tahini, chickpeas and wraps the rest is simply building the wrap with fresh veggies. Then you can add a dressing, sauce or dip and serve.

Step 1: Make the Tahini You can use store-bought tahini or make this creamy homemade tahini.

Step 2: Roast the Chickpeas To keep the chickpeas tender rather than over-crisping them we roast them at a low heat. You can also simply drain, smash and season the chickpeas if you don’t feel like roasting them.

Remember to add a drizzle of extra virgin olive oil!

Step 3: Toast the Wraps This can be done on the stove in a skillet or use the air fryer. In the skillet, wait for it to be very hot and then place the wrap down. Use a pair of tongs to flip and brown both sides.

Air fryer method: Brush a little olive oil on both sides and air-fry for 1-2 minutes until light golden brown.

Step 4: Dice and chop Bell pepper and spring onion. You can either gently tear the fresh herbs or give them a rough chop.

Step 5: Assemble the Wraps Spread a generous layer of creamy tahini on the wraps. Layer the roasted chickpeas, fresh veggies, and seasonings. Drizzle with olive oil, a little extra tahini, and a dollop of sour cream (optional). Finish with toasted breadcrumbs, pieces of cheese and a drizzle of your favorite hot sauce.

Recipe Tips and Notes

  • Red Onion Tip: To reduce the sharpness of red onions, soak them in a mixture of water and vinegar. Just for a few minutes.
  • Balancing Heat: Want less heat in sriracha hot chili sauce ? A squeeze of lemon juice and a drizzle of olive oil can help mellow the heat.
  • Add More Crunch: For added texture, sprinkle some nuts or seeds on top of the wraps.

How to get char marks on your tortillas or wraps? Use a pair of tongs to heat the wrap on an open flame on a gas stove burner. Takes about 20 seconds, just stay attentive while doing it. OR you can use a dry hot skillet. We use this iron pan (same pan we use for burnt spaghetti!)

Variations

  • Herb it Up: Add your preferred fresh herbs. We used fresh parsley and fresh basil leaves. Try others like chives, fresh oregano, mint, cilantro, or even baby spinach and rocket (also known as arugula)
  • Spice it Up: Use dried pepper flakes instead of fresh chilies for a different kick.
  • Protein Boost: Add grilled chicken, rotisserie chicken, or falafel for a heartier meal.
  • Crunchy Topping: Toss in crunchy seeds or nuts like sunflower seeds or almonds for a satisfying bite.

How to Serve Wraps

With a refreshing sparkling water as a drink and fresh fruit slices on the side. Sliced avocado for creaminess or even a salsa. Adding a dip to the meal is always a great idea. Try dips like labneh, beetroot hummus, baba ganoush or some of thes dip recipes. Serve these Creamy Tahini Chickpea Wraps with a side of crispy sweet potato fries, this light salad, or a whipped feta dip.

These Creamy Tahini and Roasted Chickpea Wraps are worth making because they are quick, easy, healthy, and super flavorful.

Ingredients
  

  • 400 grams canned chickpeas, drained
  • 1/2 cup tahini
  • 4 whole wraps, toasted or warmed
  • 3 spring onion, sliced
  • 2 mild fresh chilies, sliced
  • 1 red bell pepper, diced
  • 1/4 cup toasted breadcrumbs, optional
  • Extra virgin olive oil
  • salt and black pepper to taste
  • 1/2 teaspoon cumin spice
  • 1 teaspoon smoked paprika

For Serving

  • 1/3 cup sour cream
  • caciotta cheese, feta cheese or any cheese that you can crumble on top.
  • additional breadcrumbs
  • hot sauce

Instructions 

  • Step 1: Make the Tahini You can use store-bought tahini or make your own (it’s super easy!). Find the full recipe here.
    4 whole wraps, toasted or warmed, Extra virgin olive oil
  • Step 2: Roast the Chickpeas For a flavorful crunch, roast the chickpeas in the air fryer or in the oven. (see notes below).
    400 grams canned chickpeas, drained
  • Step 3: Toast the Wraps This can be done on the stove in a skillet or use the air fryer. In the skillet, wait for it to be very hot and then place the wrap down. Use a pair of tongs to flip and brown both sides, about a minute. In the air fryer, I prefer brushing a little oil on both sides of the wrap, place into a preheated air fryer on high heat for 1 minute or until light golden brown.
    1/2 cup tahini
  • Step 4: Prepare the Veggies Chop the bell pepper and thinly slice the spring onion fresh chillies. Rinse and either gently tear the fresh parsley and basil or give it a rough chop.

  • Step 5: Assemble the Wraps Spread a generous layer of tahini on the wrap, then layer the roasted chickpeas (you can use a fork to smash some of the down). Add the fresh veggies, freshly chopped herbs, a pinch of salt and pepper, drizzle with extra virgin olive oil, a little extra tahini, and a dollop of sour cream (optional).
    1/4 cup toasted breadcrumbs, optional, salt and black pepper to taste, 1/2 teaspoon cumin spice, 1 teaspoon smoked paprika, 1/3 cup sour cream, caciotta cheese, feta cheese or any cheese that you can crumble on top.
  • To Serve: Finish with toasted breadcrumbs, pieces of cheese and a drizzle of your favorite hot sauce. Serve immediately.

Notes

Red Onion Tip: To reduce the sharpness of red onions, soak thinly sliced onions in a mixture of water and vinegar for a few minutes. For a milder taste, use ice water.
Balancing Heat: If you’re using spicy sriracha hot chili sauce, a squeeze of lemon and extra olive oil can help mellow the heat.
Toasted Breadcrumbs – For a crunchy texture (optional) and can be used in the layers with the chickpeas and tahini and then on top for that extra bit of crunch!
To substitute the breadcrumbs:  Sprinkle nuts, seeds or Greek feta cheese. 
Chickpeas:  For the best texture, keep the chickpeas tender rather than over-crisping them. You can also use drained, smashed and well seasoned chickpeas instead of roasted chickpeas.
