As spring approaches we're leaning more into quick meals. No actually I love quick meals, don't you? Chicken It would be lovely to go with a home roasted chicken but you know what's quicker and not necessarily better? A rotisserie chicken! Based purely on spending less time in the kitchen this is the way to go.
Pasta There are different shapes and sizes that are paired better for the sauce or type of ingredients being used. There are also those days when you mix different pasta shapes altogether. Use what's in your cupboard.
Salami This brings a distinct taste to the recipe so make sure its a quality choice.
Artichoke We all love fresh Artichoke I'm sure but not every day is a Sunday so jarred pr canned artichoke to the rescue.

Roasted sweet bell pepper The red, yellow and orange ones are the sweet kind. Roasted peppers are very easy to make and when seasonal they're most affordable so roast and jar. You can also buy roasted peppers but they are not the most cost effective.
Black olives Pitted are usually a very dry because unlike Kalamata olives, black olives are jarred in water and salt not vinegar. These are always better for things like pizza because they're not soaked in vinegar, pitted and don't create soggy toppings.
Bocconcini Small fresh mozzarella balls for even more melted cheese.

If your family doesn't mind rocket it's a lovely light side plate, originates in the Mediterranean and is also known as arugula. Add a light dressing of olive oil, fresh lemon and sea salt since the pasta bake is filled with rich cheesy goodness!

Mediterranean Chicken Pasta Bake
Ingredients
- 3 cups cooked pasta any
- 2 cups shredded chicken whites
- ½ cup cherry tomatoes halved
- ½ cup roasted bell peppers
- ½ cup artichokes
- ⅓ cup Parmesan cheese cubed
- ¼ cup sundried tomato with the oil
- ¼ cup parsley
- ¾ cup salami
- ¼ cup pitted Kalamata olives
- ½ cup bocconcini fresh mozzarella balls, halved
- ¼ cup fresh basil chopped
- salt & Pepper to taste
Instructions
- Cook the pasta in boiling salted water, drain and set aside.
- Preheat your oven to 210°C / 410°F
- Add the remaining ingredients into a large salad / serving bowl, add the pasta and gently combine.
- Use extra virgin olive oil, sea salt, fresh black pepper and pasta seasoning to serve.
- Garnish with remaining basil, parsley or both.
